½ cup pecans, chopped (plus additional for garnish)
1 cup mashed banana (2-3 bananas)
3/4 cup milk of choice, at room temperature
2 eggs, at room temperature (can substitute with flax eggs for #vegan option)
1/4 cup coconut oil, melted and slightly cooled
1/4 cup agave (or sweetener of choice)
1 1/2 teaspoons pure vanilla extract
2 cups rolled oats
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
Preheat oven to 350. Roast pecans for 4-6 minutes. Beat bananas, milk, eggs, coconut oil, agave and vanilla until smooth. Blend in oats, cinnamon and salt. Spread in greased baking dish, and bake 20-25 minutes. Cool 5 minutes, and eat!
